Fed up of eating meat or fish for dinner but don’t know what else to eat? Why not try these delicious cauli-cheese dumplings as a meat alternative. They are cheap and easy to make and can be enjoyed cold the following day as a tasty snack.
These can be made low-carb by using soya flour instead of gluten-free flour. The soya flour will also increase the protein value.
1 small head of cauliflower, chopped into chunks
2 large eggs beaten
2 oz strong cheese (Parmesan, strong Cheddar or blue) grated or crumbled
2 oz gluten-free flour or soya flour
salt and pepper to season
butter, lard or coconut oil to fry
boil or steam cauliflower until soft, then mash
Add eggs, cheese, flour of choice and salt and pepper and mix together
Shape into walnut-sized balls
Bring large pot of salted water to boil, drop in dumplings, when they rise to the top remove with a slotted spoon.
Heat butter or oil in a frying pan and fry dumplings until brown on either side
