Authentic pizza is one food most of us miss out on when following a wheat-free, Paleo or low-carb lifestyle, but it does not have to be the case. There are many fantastic alternative pizza base recipes available that can easily substitute for the traditional pizza, and here is one of the marvellous versions below.
Also, the great thing with this pizza is we can actually lose weight whilst filling our bellies with it… Perfect for a Saturday night in front of the telly…yummmm!
The good news is most of the delicious toppings are wheat and sugar-free so now you’ve got the base covered, feel free to experiment with toppings.
This base is complete in that in includes protein, carbohydrate and fat, whilst being rich in essential nutrients and low carbohydrate so it wont spike blood sugars. It is easy to whip up and freezes well.
Yield 4 medium pizzas
2 cups ground almonds
1 head of cauliflower made into ‘cauli rice’ (either grate of pulse cauliflower in food processor)
1 cup grated mature cheddar (or other strong cheese of choice)
2 medium eggs
salt and pepper
Line baking trays with greased, greaseproof paper
Place all ingredients into bowl and mix together
divide mixture into 4 and using hands, press mixture into flat pizza shapes on baking trays. Each pizza should be about half an inch thick.
Pop into oven and bake for 15 mins, or until golden brown
Place on toppings of choice on top and place back in oven for 10 to 15 mins.
These bases can be made in advance and frozen. They are not as firm as regular pizza bases so you will need to use a gentle hand when removing them from greaseproof paper or you could serve with paper still attached.
