Celery is a very underrated vegetable. It is mainly used raw in salads or as an accompaniment to dips, yet is equally delicious when cooked. This soup is satisfying and tasty, easy and economical to make.
Not only has celery got many nutritional benefits it is also good for numerous nervous conditions. Hippocrates, known as the ‘Father of Medicine’, used celery in the treatment of nervous patients and modern research in China and Germany have found essential oils extracted from the celery seed, to have a calming effect on the central nervous system.
You will need a hand blender or food processor for this recipe.
Suitable for maintenance, levels 1,2 and 3
makes 2-3 large servings
3 sticks of celery, peeled and finely chopped
1 medium onion, peeled and diced
1 potato, peeled and chopped into small chinks
2 to 3 tsp vegetable stock (depending on taste preference)
1/2 pint boiling water
knob of butter
2 tbsp double cream
salt and pepper
Melt the butter in a medium-sized pan. After it stops sizzling, but before it turns brown, add the onions and toss around to cover them all in butter. turn the heat down and let them sweat for 5 minutes.
Next add in the rest of ingredients, except the double cream, stir in together, bring to boil, then stir again. Turn heat down, cover and simmer for 20 minutes.
