Coconut oil is 90% saturated fat. It has medium chain triglycerides (MCT), which are medium in length. Most fatty acids in foods like dairy and vegetable oils contain long chain fatty acids. What is different about MCTs is they go straight into the liver from the digestive tract and are used as a quick source of energy, providing more energy over a 24 hour period than any other fat source. They can also be used as a fuel source for the brain which makes MCTs very beneficial for disease like Alzheimer’s, where the brain can no longer metabolise glucose, its normal fuel source.
