Gluten-Free Chocolate Bread

Health Bite:  This bread contains all the essential amino acids the body needs as well as the major minerals. It’s a complete protein, high in fibre, both soluble and insoluble, rich in vitamin E and omega-3, as well as being low GI.  The dark chocolate adds health giving antioxidants.

Recipe:

Makes 1 small loaf  

for a larger loaf, double ingredients and add 10 mins to bake time

2 cups wheat/gluten-free flour

2 cups almond meal (ground almonds)

1 cup ground flaxseed (otherwise known as linseed)

1 tsp sea salt

2 tsp unrefined sugar

3 tsp milk powder

1 tsp Xanthum gum

2 tsp baking powder

1 1/2 cups black tea (stew a tea bag in hot water as though making a cup of tea)

2 eggs

100g dark chocolate, chopped into small chunks

Instructions

Preheat oven at 200 ºC

Mix together all dry ingredients with fingers to ensure there’s no lumps then add the chocolate chips, distributing them evenly through the flours.

Add in eggs and black tea and combine well.

Pour mixture into a small bread tin that has been lined with greased, greaseproof paper and bake for 25 to 30 minutes.

Cool on a wire rack, slice and serve.

This bread can be toasted and freezes well (slice before freezing).
