Posh Cauliflower Cheese

OLYMPUS DIGITAL CAMERAA delicious way to eat cauliflower, which can be quite bland when served on its own and always needs some livening up. This is a light, yet filling dish than can be made in advance of serving.


Health Bite: Cauliflower is high in fibre and is a good source of vitamin C, which makes it good for cancer protection and general immunity.



3 cups of cooked cauliflower

1/2 cup double cream

1 cup of grated cheese

salt and pepper


Add half the cheese to the cream in a pan, season well and gently heat through to melt cheese (do not bring to boil to avoid cream separating).

Preheat grill.

Place cauliflower into cream and cheese mixture and stir in well.

Pour cauli-mixture into a heatproof dish, sprinkle with rest of cheese and pop under grill till cheese is browned and melting and mixture is bubbling.

Serving Suggestion Delicious served with sweet potato fish cakes
