makes 6 to 10 biscuits
2 cups puffed brown rice, or 3 rice cakes shredded in food processor into small pieces
1 cup ground almonds
1 egg, beaten
2 tbsp virgin olive oil
1/2 tsp sea salt
Preheat oven at 180ºC and line 2 baking-trays with greaseproof paper.
Mix all dry ingredients together with fingers and add egg and olive oil. Combine together.
Taking small clumps of mixture, roll into a ball in your hand then flatten out as flat as you can get them, without allowing mixture to crumble.
Place biscuits on baking tray and pop in the oven for 10 minutes.
Cool on a wire rack.
