Broccoli and Blue Cheese Burgers

BBC BurgerFor vegetarians, following a wheat, gluten or grain-free diet can be much harder work than it is for the carnivores.

Most vegetarian products on the market will contain wheat and those that don’t, tend to cost an arm and a leg. Wheat-free vegetarian dishes do not have to be costly nor challenging to make. As long as you have the right kitchen appliances, like a food processor, wheat-free vegi cooking can be easy and fun!

These broccoli and blue cheese burgers can be whipped up in minutes, are cost effective and rather tasty.

Suitable for maintenance and level 1



Makes 6 to 10 burgers, depending on the size you make them (suitable for freezing).

400g cannellini beans, drained and rinsed

1/4 head broccoli

1/2 carrot, peeled

1 leek, trimmed and washed

2 oz blue cheese

2 oz cheddar cheese

1 egg, beaten

2 tbsp rice flour or any gluten free plain flour

3 tbsps oil to cook


Using a slicing mechanism on a food processor, slice the broccoli, carrot and leek, then place them into a large bowl, or chop them very finely.

Change the blade on the food processor to the blending blade then pour in cannellini beans and the cheeses then blend till smooth. Scrape out beans and cheese mixture and place in the bowl with other ingredients. Mix well.

Next, add the egg and the flour and again, mix together.

Chill in fridge for a couple of hours to firm up mixture.

Take clumps of burger mixture, roll into balls then flatten out into burger shapes.

Heat oil in frying pan on high.

Cooking the burgers in batches, brown either side of burger, then turn heat down and cook for 10 minutes either side or till veg is cooked through.

Serve immediately.
