This is a nutritious and satisfying dish which is perfect for those long, dark winter evenings. And you don’t have to be a vegetarian to enjoy it.

Please note: Quorn mince contains gluten but not wheat.
Health Bite: Peas provide an excellent source of thiamin (one of the B vitamins). They are also rich in folic acid and supply useful amounts of vitamins A and C as well as protein (although not a complete protein, needs to be combined with a cereal).
1 pack of quick-soak dried peas, soaked as per packet instructions
2 carrots, peeled and chopped finely
1 large onion, peeled and diced
2 sticks of celery, peeled and finely chopped
2 medium potatoes peeled and cubed
1/2 pack Quorn mince
2 to 3 tsps of stock (wheat or gluten-free)
2 bay leaves
2 tbsp oil
salt and pepper
Pop kettle on, half full.
Heat oil and soften onions for 5 to 10 minutes.
Next add the rest of the ingredients, except the Quorn mince, and pour in boiling water to just cover the veg and peas. Bring to the boil then cover and simmer for 15 minutes.
Now, add in the Quorn mince, bring back to the boil, cover and simmer for 15 minutes.
Remove bay leaves, season well and serve.
