Hearty Pea Soup

This is a real winter warmer! Hearty and satisfying…

Health Bite: Peas provide an excellent source of thiamin (one of the B vitamins). They are also rich in folic acid and supply useful amounts of vitamins A and C as well as protein (although not a complete protein, needs to be combined with a cereal to make it complete).

Recipe

Serves 4

1 pack of quick-soak dried peas, soaked as per packet instructions

2 carrots, peeled and chopped finely

1 large onion, peeled and diced

2 sticks of celery, peeled and finely chopped

2 to 3 tsps of stock (wheat or gluten-free)

2 bay leaves

2 tbsp oil

salt and pepper

Instructions

Pop kettle on, half full.

Heat oil and soften onions for 5 to 10 minutes.

Next add the rest of the ingredients and pour in boiling water to just cover the veg and peas. Bring to the boil then cover and simmer for 20 minutes.

Remove bay leaves and blend the soup, leaving some chunky veg pieces still in, season well and serve.
