Creamed Sprouts

This is an alternative way to cook sprouts and can be enjoyed by those who wouldn’t normally like them.

Suitable for maintenance and levels 1,2,3 and 4

Health Bite: Brussel sprouts have the same health benefits as other members of the brassica family. They are a good source of vitamin C and beta-carotene and are beneficial for all skin problems.

Recipe

Serves 2 to 4

1 large leek, trimmed and top layers removed

10 oz sprouts, peeled and trimmed

2 tbsp double cream

2 knobs of butter

salt and pepper

Instructions

Using the slicing tool on a food processor, shred the leeks and sprouts, alternatively slice them very, very finely.

Heat butter in a large frying pan, when it stops sizzling add the sprouts and leeks.

Turn heat down and gently fry for 15 minutes, or to desired texture and taste. Add double cream and season well.

Stir in cream, heat through and serve
