Health Bite: Almonds are packed with vitamin E which is a powerful antioxidant. They are great for keeping hunger at bay and balancing blood sugars after eating.
2 cups almond meal (ground almonds)
1/2 cup mixed dried berries (e.g. blackberry, blueberry, raspberry)
1/2 cup dried, unsweetened, coconut
1/2 cup mixed seeds (sesame, sunflower, pumpkin)
1/4 cup honey, unrefined sugar or granulated stevia
1 tsp baking powder
1 tsp vanilla essence
2 tbsp oil (such as coconut, sunflower, rapeseed or melted butter)
Preheat the oven to 180 °C
Mix all the above ingredients together in a bowl.
Tear off 2 pieces of baking paper, the size of a small baking tray. Place mixture in the centre of one sheet and cover with the other. Then using a rolling-pin, roll out mixture to about an inch thick.
Carefully peel off the paper and, using 1 of the pieces of greaseproof, place the rolled out mixture onto a baking tray, then pop into the oven for 10 minutes.
Using a pizza cutter or sharp knife, slice into the desired size, remove from parchment and allow to cool on a rack.
