This high protein meal is great for breakfast or lunch. It is satisfying and delicious. Serve with a couple of grilled or fried tomatoes.

for the pancake (double up ingredients as required)
2 tbsp gram flour
3 tbsp water
salt and pepper
oil to cook
1 to 2 eggs
gluten-free tomato ketchup
Put gram flour and water into a bowl or jug and whisk up. Season well.
Heat oil in a large frying pan.
We are going to cook the eggs and pancake in the same pan at the same time, so make sure there’s room.
Pour batter mixture in a thin pancake shape on one side of the pan For 1 to 2 minutes
Crack eggs into frying pan a small distance from the pancake
Flip pancake to cook other side for a minute or two.
Remove pancake from pan and top with eggs when cooked to liking.
