Gluten-Free Super-Bread

Super BreadThis hearty loaf  is perfect for sandwiches, toasting, dipping, slathering in butter or eaten any way you prefer. It is very filling so you won’t need more than 1 or 2 slices!

Health Bite:  This bread contains all the essential amino acids the body needs as well as the major minerals, it’s a complete protein, high in fibre, both soluble and insoluble, rich in vitamin E and omega-3, as well as being low GI.  All of which makes super-bread not only tasty, but super healthy too! It is great for keeping the skin and digestive system in tip-top condition as well as being beneficial to cardiovascular health.

Recipe:  

Makes 1 small loaf, double ingredients 

for a larger loaf and add 10 mins to bake time

2 cups wheat/gluten-free flourSuper Bread

2 cups almond meal (ground almonds)

1 cup ground flaxseed (otherwise known as linseed)

1/2 tsp ground black pepper

1 tsp sea salt

2 tsp unrefined sugar or granulated stevia

3 tsp milk powder

1 tsp Xanthum gum

2 tsp baking powder

1 1/2 cups black tea (stew a tea bag in hot water as though making a cup of tea)

2 eggs

Instructions

Preheat oven at 200 ºC

Mix together all dry ingredients with fingers to ensure there’s no lumps then add in eggs and black tea and combine well.

Pour mixture into a small bread tin that has been lined with greased, greaseproof paper and bake for 25 to 30 minutes.

Cool on a wire rack, slice and serve.

This bread freezes well (slice before freezing) and is great to use for breadcrumbs.
