Seafood and Dill Omelette

Taking omelettes to another level! If you like seafood and omelettes then this dish is for you! It can be whipped up in minutes and makes a satisfying lunch or dinner.

Health Bite: Eggs are an amazing source of protein and are little nutritional powerhouses. They are a rich source of zinc, vitamins A, D, E and B, especially B12 (which is very beneficial for vegetarians) and are incredibly versatile.


Serves 2

6 to 8 oz of cooked mixed seafood (or just prawns)

juice of half a lemon

2 spring onions, trimmed and finely chopped

3 large eggs

2 tbsp double cream

2 tbsp dill chopped finely

salt and pepper

1 tbsp oil and a knob of butter to fry


Place the seafood in a bowl with lemon juice and spring onions. Season and mix well.

Place the eggs, dill and double cream in a bowl and beat together, then pour in seafood mix.

Heat oil and butter in frying pan. After it stops sizzling pour in the egg mixture and coat the base of the pan evenly. Cook on a low heat for 10 minutes or until base is golden and all egg is cooked. If prefered omelette can be popped under a grill, for a couple of minutes, to crisp up the top.

Serve immediately
