Chicken and Tomato Skewers

This is a great one for the barbi! The longer the chicken is marinated the deeper the flavours become.

Suitable for maintenance and levels 1,2,3 and 4

Health Bite: Chicken is one of the best animal sources of quality protein. It contains many nutrients as well as selenium which is great for improving mood.

Chicken and Tomato Skewers Recipe 

2 large chicken breasts chopped into bite-sized chunks

1 tbsp mild to med curry powder

3 oz natural yoghurt

juice of 1 lime

1/2 tbsp unrefined sugar or honey

1 tsp cumin seeds

6 oz cherry tomatoes


Mix the curry powder, yoghurt, lime juice, sugar and cumin seeds into a glass bowl, then pop the chicken in and make sure all is well covered.

Cover and marinate in a fridge for 6 to 8 hours or longer.

Thread the chicken onto skewers alternately with the cherry tomatoes onto 4 skewers.

Cook in the oven for 12 to 15 mins, under the grill or on the barbi (turning often). Check chicken is cooked through before seasoning and serving.

Serving Suggestion:

These skewers work well with savoury rice or buckwheat, or a fresh crisp salad.
