Creamy Coleslaw

Coleslaw is a great comfort food. It goes well with meat, fish, poultry and vegetarian dishes. The delicate, sweet flavour of the carrots is a perfect accompanient to the pungency of the cabbage and onion.

Suitable for maintenance and levels 1,2,3 and 4

Health Bite: Carrots are a super-food which contain vitamins B,C,D, E, K, folic acid and beta-carotene and are excellent for supporting and strengthening the immune system.

Creamy Coleslaw Recipe

1 large carrot peeled and grated 

¼ of a head of cabbage (red or green) shredded finely

¼ of a brown onion finely diced

2 tbsp of gluten-free mayonnaise or 1 tbsp natural yoghurt, 1 tbsp mayonnaise

Salt and pepper to taste


In a bowl mix all ingredients together, add required salt and pepper.

Serve or cover and chill for a later date.

Serving suggestion: add to a jacket potato (sweet or brown) with grated cheese for an economical, satisfying meal.
