Waldorf Salad

This salad will brighten up the darkest days. It is light and refreshing and will work well as a starter or light lunch.

Suitable for maintenance and levels 1,2 and 3

Health Bite: An apple a day keeps the doctor away! There is great wisdom in those words. Apples are high in potassium and vitamin C, rich in plant compounds and the pectin content makes them a great form of soluble fibre. Which in all, makes apples way up there in the health department!

Waldorf Salad Recipe

Handful of pecan or walnuts  

1 dessert apple peeled and chopped

Juice of 1 lemon (to cover peeled apple to stop it from browning)

1 celery stick, peeled and chopped

A few grapes, halved

½ a cup of natural yoghurt

Handful of lettuce (rocket or other)

Salt and pepper to taste


Put peeled apple in a bowl with lemon juice.

Lightly toast nuts in a frying pan for a few minutes then tip into bowl with apple.

Add celery, grapes, lettuce and toss together.

Pour over natural yoghurt combine ingredients and season with salt and pepper then serve.

Serves 1 to 2

Serving Suggestion:  Toss in some soft goats cheese to make salad more substantial (works especially well with rocket)
