Greek Salad

This super-simple yet delicious salad can be enjoyed in the summer or winter months. It will brighten up any plate and is packed with nutrients.

Suitable for maintenance and levels 1,2,3 and 4

Health Bite: Olives are one of the richest sources of monounsaturated fats. They are high in vitamin E, which is a powerful antioxidant, they are also anti-inflammatory! 

Greek Salad Recipe

¼ of a cucumber diced (peeled is optional) to prefered size  

4 vine-ripened tomatoes, diced to prefered size

6 green or black olives stoned and halved

¼ pack of feta cheese, cubed

Extra virgin olive oil


Simply toss all the ingredients together, drizzle over virgin olive oil. Add salt and pepper to taste.

Serves 1 to 2

Serving Suggestion: This dish goes well with fish, chicken or vegetarian dishes
