Courgette Ribbons

A beautiful accompaniment to vegetarian dishes, salmon or chicken are courgette ribbons. They are super-simple to make and their delicate flavour will not overpower other flavours.

Suitable for maintenance and levels 1,2,3 and 4

Health Bite: Courgettes are great for skin problems and are rich in Vitamin A. A single serving provides a quarter of our daily needs of folic acid and is a rich source of potassium.

Courgette Ribbons Recipe

1 medium courgette (per 2 persons) 

Butter to fry

Splash of cream (optional)


Using a potato peeler and a heavy hand, slice courgette lengthways; heat butter in large frying pan, just after it stops hissing add courgette and toss around in butter for a few minutes. If desired add a splash of cream, warm it through then serve.

 Serving Suggestion: Works well with vegetarian or fish or poultry
