So simple to make! Great for the carnivore or vegetarian!

Health Bite: Tomatoes are rich in antioxidants like beta-carotene and lycopene, as well as vitamins C and E. They are great for cancer protection, skin and fertility problems. Tinned tomatoes lose few of their nutrients so can be as beneficial as fresh. (High in lectins which some people find themselves allergic to)
Basic Tomato Sauce Recipe
1 medium brown onion
1 tbsp oil
3 cloves of garlic peeled and crushed
½ red chilli, de-seeded (adjust according to desired heat)
1 tin (440g) plum tomatoes or passatta
2 tsp sugar
1 heaped tsp gluten-free stock
1 tsp dried oregano or basil (fresh leaves may be used instead)
Salt and pepper to taste
Heat oil and soften onions on a low heat, when softened add chilli and garlic for a minute before adding rest of ingredients.
Bring to boil then simmer for 30 mins on lowest heat possible.
Check seasoning then use hand blender (or food processor, check it allows for hot ingredients) and blend (mascarpone or cream can be added at this stage then reheat if required)
Serving Suggestion: Use as a base for tuna, chicken or Bolognese sauce, or in moussaka or lasagna.
